Chicory (Cichorium intybus), also known as “Achicoria,” is a hardy, perennial herbaceous plant that is commonly grown for its edible leaves and roots. The plant produces deep green, slightly bitter leaves, often used in salads or cooked dishes. The roots can be dried and ground as a coffee substitute. Chicory is well-adapted to various climates and is drought-resistant, making it an excellent choice for cultivation in Pakistan. It thrives in cooler seasons and can be grown as a winter vegetable in most regions, including Lahore.
